The difference between the high quality Babic that comes to the market from the terraces of Primosten (so-called terade) and Babic as a quality wine that comes from other location in the wine growing region of Sibenik and Primosten, can be compared to the difference between the fish from the sea and the ones grown in tanks.

On typical wine growing locations like Primosten terraces, the sugar content can exceed 20 percent. Although Vinoplod winery purchases the Babic grapes from the vicinity of Sibenik all the way to Zadar, such Babic could never reach the quality of the one from Primosten. This is affected by many things: pedologic (soil characteristics), climatic, combination of air, soil and sea, a lot of sunshine, and one shouldn’t disregards the different angles under which the sunrays come. The Babic of Primosten requires miserly and hilly terrain where it has a small yield, but with the most ingredients that later make it into a high quality wine, similar to Plavac mali. Therefore, if you take a high quality Babic, then it contains quality grapes coming from such terrains, while the bottles of quality Babic contains grapes from other locations around Sibenik, and its hinterland. The soils there are much thicker, and the vineyards also grow other varieties, so it doesn’t have the quality of grapes for production of high quality Babic.

This wine with a deep-blue to red color with a garnet reflection is full and smooth. Its accentuated originality opens the fragrance in the smothered fruity tone with the accentuated spicy notes. Dominant fragrances are dark berry fruits, black olives and figs, complemented with the fragrance of smoke, tobacco, carob, cloves... Bouquet is in the tertiary status. The varietal character is not overwhelmed by wood, while the alcohol (13.4 vol. percent) is blended well. The taste is clean and nicely expressed, salty, dray, ripe and warm, the tannins are nicely granulated, pleasantly drying. The aftertaste is pleasantly spicy, lively and with a solid length.

Best paired with: red meat dishes, smoked ham, and in order to get the full impression, we recommend you pair it with Primosten sheep cheese
