Don Maximiano Founder's Reserve 2005

The Don Maximiano Vineyard lies in Aconcagua valley, a region characteristic for long dry periods and moderately warm summer days cooled by the afternoon breeze from the Pacific. This especially valuable Chilean wine is a blend in the following ratios: 85 percent of Cabernet Sauvignon, 7 percent of Cabernet Franc, 5 percent of Petit Verdot and 3 percent of Shiraz.
After the vintage of 2004 was sold out, Don Maximiano from 2005 is coming to the “Vivat and partneri” wine boutique in Zagreb next week. Wines from 2005 are exceptionally good since there was not much rain during the aging period, and the summers months recorded only moderate top temperatures. These conditions postponed the harvest for each of the varieties for approximately a week, but at the same time the climate enabled complete riping of tannins, at the same time preserving fresh fruit aromas and flavors.
With its intensive, deep red hue, Don Maximiano 2005 is characteristic for its sour cherry character, blended with mild notes of black currant, truffles and cloves. The aroma reveals cigars and black peppers that contribute to light spicy character of this wine, raising its aromatic complexity.
Strong on the palate, with tannins filling the mouth and reflect the domination of Cabernet Sauvignon in the blend. Other varieties also play their special roles, Petit Verdot gives it freshness and nerve, Cabernet Franc gives it tannins and a spicy aromatic profile, Shiraz brings in the notes of sweet, ripe black fruits. Aging in French oak gives a flavor of caramels, chocolates and cloves that are felt nicely in the long finale.
The wine can be tasted immediately with obligatory decanting, but it will improve even more in the bottle over the next few years, so it is suitable for collector’s as well.
Best paired with: red meat, especially lamb.
