Caliterra Cabernet Sauvignon Tribute 2006

One of the main reasons why the Croatian consumers think very highly of Chilean wines is their price to quality ratio. The wines from Calliterra winery areno exception; they successfully combine the innovative techniques of the New World with the Chilean winemaking tradition.
If we had to single out one variety for which the Chilean wines are definitely very well known to a wider circle of wine lovers, it would definitely be the Cabernet Sauvignon. This is not a surprise, since Callitera has 5 brands, with a Cabernet Sauvignon in each of them (as a single variety or a blend). Another thing that could separate Calitterra wines based on Cabernet Sauvignon is their consistency and homogeneousness. Of course, there is a difference between particular harvests, but when you buy one of their bottles, you can be almost certain not to be disappointed.
The grapes for this wine were selected from the best quality parts of Caliterra vineyard estates in the Colchagua Valley appellation. After the grapes are hand-picked, they are separated from the stems, gently pressed and transferred into stainless steel barrels. Fermentation started at the temperature of 28°C, but during the 25-day maceration, the temperature decreased in order to prevent the excessive extraction of ingredients from grape skins. After that, the wine was transferred for aging into French and American oak barrels over the 14 months, during which it underwent malolactic fermentation.
The result is a deep ruby red wine with an extremely layered and enchanting aroma dominated by typical aromas of berry fruits, as well as smoked aromas of barrique immaculately blended into the entire aroma profile. Rather high 14.5 percent of alcohol is well supported by the increased, but soft and accessible acids in the mouth. Still, taking into account the rich aroma, the flavor lacks concentration and juiciness. The body is slender to medium full with extremely soft tannins.
The sampled specimen is a test specimen of Cabernet Sauvignon of New World style, but in no way the traditionalists would think in a bad sense, but thanks to the fact that the intensive use of wood during fermentation can produce a subtle, layered and interesting wine (especially if we are talking about the aroma aspect).
