Bouvet, Rubis Excellence

When it comes to sparkling wines manufactured using the classical method outside the region of Champagne, winery Bouvet Ladubay is rightfully considered as one of the best, and as a winery that is able to manufacture a top quality sparkling wine.

The basis wines for Rubis are made from varieties Cabernet, Gamay and Grolleau that are blended into the final blend after the separate first fermentation. This is followed by the usual sparkling wine production process using the classic method, consisting of the second fermentation in the bottle and the aging of wine on the lees in old limestone cellars, with final degorging and dosing.

The wine we tasted surprised us pleasantly with its pronounced dark red hue, with purplish reflections around the edges of the glass. After pouring, a very rich and thick dark red foam appears on the surface, creating a unique experience for the eye with the appropriate pearling.

On the nose, this sparkling wine has aromas of dark berry fruits (blueberries and blackberries) gently underlined with smoky notes. The noticeable aroma of the wine cellar in the entire combination seems very pleasant.

The multitude of aromas of dark fruits and yeast is supported with moderate acidity, while the sparkling sensation might be somewhat more pronounced. Despite that, the wine simply slides down the throat, refreshes, but at the same time offers certain depth, with mild tannins in the background that complete the entire structure.

In terms of look, aroma and flavor, the wine seems very seductive, and since it was dosed as a semi-dry wine, we believe that this wine will become a true friend of the female wine enthusiast audience.

Best paired with: fruit cake and desserts, but it is also an excellent sipping wine.
